I have been using my slow cooker a bit lately. With everything else that's been going on here (a deluge of paper from work, colds and flu, just the general busy-ness that comes with having three children), easy, cheap and food that's ready when I get home has been more than appealing!
Italian Beef Hotpot (serves 4... at least)
Ingredients:
500g diced steak
6 mushrooms, sliced
2 carrots, sliced
2 potatoes
1.5 cups stock
1 tin tomatoes
1 cup red wine
3 tablespoons tapioca
Salt/Pepper to taste
Herbs to taste (eg mixed Italian herbs)
Method:
Put all ingredients into a slow cooker
Cook on low for 8 hours
Serve with mash/bread/fettucine
Some optional extras:
Add risoni after 6/7 hours for a thicker stew
Add additional veges as required
Add cream before serving
(my favourite) add a half teaspoon of curry powder for additional flavour
I love it! Such a lovely pick me up after a long day.

Birthday treats - cherry slice recipe
The party at the park (yesterday) was lots of fun. I hope the guests had as much fun as we did :) Here are some pictures from the grand occasion.
Ingredients:
A) 1 pack scotch finger biscuits (I am lazy and these are easiest to crush) and 3/4 cup of shredded coconut (desicated would also be fine)
OR
B) 3 cups of coconut
1/2 pack of those sticky cherries you buy in the cooking aisle, chopped fine
1/2 can condensed milk
100g melted butter
Pink colouring (optional)
375g block of dark cooking chocolate
1/3 cup cream
(8 x 8" slice tray, saucepan for melting chocolate, two mixing bowls)
Method:
1. Crush biscuits. Or, preferably, find someone to do it for you ;)
2. Add shredded coconut.
3. In a separate bowl, mix condensed milk and butter until combined. Add chopped cherries and a tsp of food colouring (if desired)
4. Add 'wet' ingredients to dry ingredients
5. Press into your slice tray and refrigerate
6. Melt dark chocolate. Add cream and blend well.
7. Pour over slice base
8. Return to refrigerator until set
9. Cut with a hot knife

This is my own recipe, but I have taken inspiration from my friend Tameka who makes an absolutely unbeatable cherry ripe slice (much more fiddly than this one) and my oldest friend Jo - who loves no fuss cooking as much as I do (and who gave me the easy lime slice recipe that I used as a base).
Ahhh... I see what all the fuss was about... Cake IS good!
Good boy, reading the cards first!
Zingzilla Birthday cake made by me. Shame about
the teenage acne he seems to have!!
Cupcake tree makes its usual party appearance :)
Why yes - here in Australia, we really DO ride kangaroos to school!

Homecooked yumminess...
Someone once told me that people will forget a lot of things about you, but they'll always remember the food you prepared for them...
To me, the effort someone takes to put food on your plate always seems to be a reflection of how much they care, so despite the fact I:
1) hate following recipes and
2) hate spending time in the kitchen
in recent years, I've tried to put effort into improving my cooking skills. This has been quite a challenge for me as I'm more a hunter/gatherer type of person and while I love shopping for tasty treats, I'm the sort of person whose recipes never quite turn out right...
Yesterday, I decided to try a grown-up recipe. You know, the sort you have to plan ahead for, put items on your shopping list for, have someone in mind for when you cook it. Since we were expecting visitors, I decided to try baking a Blueberry Cake. It had yoghurt and fresh blueberries, so I figured it wasn't all bad (so far as cakes go).
Here is the fruit of my labour... it actually turned out OK! Shocking, I know but I am finally showing some progress!!!
